easy and fast

Trim any excess fat from the pork fillet and cut into slices approximately 2 cm thick. Slice the onions into half rings. Add fat (oil, clarified butter, or similar) to the pan and sear the pork fillet for approximately 1-2 minutes per side. Season with salt and pepper. Remove the meat from the pan and set aside. Add the onions to the pan and fry until translucent. Pour the hollandaise sauce into a small saucepan and heat. Line a baking tray with baking paper. Preheat the oven to 100 degrees Celsius (212 degrees Fahrenheit). Briefly toast the slices of bread in the toaster, arrange them on the baking tray, and top each with two pieces of pork fillet. Arrange the onions on top. Pour 2-3 tablespoons of hollandaise sauce over the meat and onions. Top with cheese slices, covering the bread as much as possible. Bake in the oven for 10-15 minutes (depending on your taste). Since it is very hearty, we like to eat it with a fresh green salad with cucumber and tomato.
