Homemade chocolate muesli

Ingredients for 14 servings:

  • 500 g muesli (5-grain muesli) or a grain-oat mixture
  • 100 g hazelnuts, ground or almonds
  • 80 g brown sugar
  • 2 tbsp flaxseed
  • 1 pinch of salt
  • 1 tsp cinnamon
  • 2 tbsp baking cocoa
  • 70 ml sunflower oil
  • 4 tbsp maple syrup
  • 80 g dark chocolate or couverture, melted
  • 30 g puffed quinoa
  • 2 tbsp chia seeds
  • 1 handful of cashew nuts, chopped
  • 1 handful of cranberries
  • 150 g dark chocolate or couveture

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

crunchy and really chocolatey

Mix everything from 5-grain muesli to cocoa powder thoroughly. Mix the melted chocolate thoroughly into the dry ingredients until every flake is coated – this takes about 3 minutes. Mix in the sunflower oil and maple syrup and spread everything on a baking sheet. Bake the mixture at 150 degrees Celsius (300 degrees Fahrenheit) with top/bottom heat for 30 minutes. Stir the muesli mixture thoroughly with a spoon every 10 minutes. Meanwhile, chop the chocolate. Once the muesli mixture has cooled, mix in the quinoa, chia seeds (which would harden in the oven), cashews, cranberries, and chopped chocolate. The quantities for the dry ingredients are adjusted to our taste. Of course, you can vary them.
