Ingredients for 6 servings:

  • 1 m.-sized banana(s)
  • 1 apple, sour
  • 30 g flaxseed, crushed
  • 300 ml almond milk (almond drink)
  • 300 g oat flakes, flower-soft
  • 40 g walnut kernels
  • 60 g maple syrup
  • 1 pinch of salt
  • 3 eggs
  • 20 g coconut oil
  • 1 tsp cinnamon powder
  • 1 tbsp cocoa powder
  • Fat for the mold

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Quarter the apple and core it. Peel the apple and banana. Cut both apples into 1 x 1 cm cubes. Gently warm the milk and pour it over the ground flaxseeds. Let it sit for about 20 minutes. Roughly chop the walnuts and mix with the oats, maple syrup, salt, eggs, coconut oil, cinnamon, and cocoa powder. Add the soaked flaxseeds and the diced fruit and mix well. Line a baking dish with paper or lightly oil it and pour in the mixture. Bake in a preheated oven at 180°C (350°F) with fan assisted cooking for about 30-40 minutes. Note: This breakfast tastes just as good hot as cold. Cut into bars, they make a great snack to take with you.
