Peel the apples, core them, and cut them into very thin slices. Place them on a large plate and cover with plastic wrap. Microwave for about 5 minutes. They should be soft enough to eat with a spoon. Mash the goat’s cheese with a fork and melt it in the warmed cream. Be sure to use a low heat. Season with salt and pepper. Finally, add the olive oil and mix everything into a creamy mixture. Place a small spoonful of the goat’s cheese mixture into small appetizer glasses and smooth the surface. Top with the soft apple slices. Then add more goat’s cheese and more apple. Layer as many times as you like. If desired, decorate the glasses with raw ham or smoked duck or goose breast.
