Savoyard Omelette

Ingredients for 3 servings:

  • 500 g potatoes, boiled
  • 100 g bacon, fattier
  • 2 onions
  • 6 eggs
  • 3 tbsp cheese, grated
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the potatoes into approximately 1 cm cubes. Dice the onions and bacon. Fry the bacon in a large pan and sauté the onions. Add the potatoes and fry until light brown. Beat the eggs with the cheese and season with salt, pepper, and nutmeg. Pour into the pan and let set. Turn the omelet over and fry until browned on the other side, then turn out onto a platter. Serve with tomato salad.
