Ingredients for 3 servings:

  • 100 g bacon, fattier
  • 6 m.-sized onion(s)
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Side dish for dumplings: fatty bacon, onions, salt, nothing else

Trim the fatty bacon – I mean smoked white bacon – from the rind and cut into 2-3 mm thick cubes. Peel the onions and dice them. Fry the bacon over medium heat; it shouldn’t brown. Then add the onions and sizzle gently, stirring, over medium heat until soft. The onions will gradually take on color. After 25 to 30 minutes, the onion dip is ready; the onions should be softened overall, with some crispy bits remaining. Don’t add any water or flour. I mention this specifically because it’s often made with these additional ingredients, but it tastes different. When everything is ready, add a little salt. This goes well with potato dumplings. Watch out, they’re fatty!
