Ingredients for 1 servings:
- 1 small zucchini
- 80 g onion(s)
- 1 clove(s) garlic
- 35 g lean ham cubes
- 1 tbsp extra virgin olive oil
- 50 ml white wine, alternatively water
- 30 g crème fraîche
- ¼ tsp salt
- 3 cocktail tomatoes
- Salt and pepper, freshly ground

Peel and finely dice the onions and garlic. Wash the zucchini, remove the stems and flower ends, quarter them, and cut into pieces. Wash and slice the tomatoes. Heat the olive oil in a pan, but do not let it get too hot, and sauté the onions and garlic. They should not brown. This takes about 5 minutes. Now add the zucchini, diced ham, and salt. Heat and simmer for 2-3 minutes, then add the white wine. Simmer for another 5-10 minutes. Remove the pan from the heat. Stir in the crème fraîche, season with salt and pepper, and stir in the tomato slices. These should remain raw. I personally love zucchini with a lot of bite, so after adding the white wine, I only simmered them for 5 minutes.
