Ingredients for 4 servings:

  • 1,500 ml vegetable broth
  • 100 g smoked tofu, finely diced
  • 2 tbsp oil
  • 2 garlic cloves, finely chopped
  • 200 g carrot(s), very fine slices
  • 150 g mushrooms, very finely sliced
  • 1 bunch spring onion(s), finely sliced
  • 3 tbsp white wine
  • 3 tbsp soy sauce
  • 1 pinch of ground ginger
  • 1 tsp syrup (agave syrup)
  • 1 pinch of chili powder
  • 1 pinch of lemon(s) – zest, grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat the oil and fry the tofu until browned. Add the garlic and fry briefly. Add the carrots, mushrooms, and spring onions and fry for 2-3 minutes, stirring. Add the vegetables to the boiling vegetable broth. Season to taste with wine, soy sauce, agave syrup, and spices.
