Sweet yeast dough made from wholemeal flour

Ingredients for 1 servings:

  • 500 g wheat, finely ground
  • 300 ml milk, lukewarm
  • 20 g yeast
  • 50 g honey
  • 1 egg(s)
  • 50 g butter, soft
  • 1 pinch of salt

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

ideal for Weckmänner, Stutenkerle or even the Zopf

Dissolve the yeast in the milk, stir in the honey, egg, and salt. Stir in the flour and incorporate the butter. Add a little liquid/flour if necessary and knead well (about 10 minutes). Cover and let rise until doubled in size. Knead again briefly and continue working with the dough as desired. Brush the dough pieces with water and cover and let rise. Bake the dough pieces in a steaming oven preheated to 180°C for 15 minutes, then reduce the temperature to 160°C and continue baking until they reach the desired color.
