Ingredients for 2 servings:
- 1 ½ kg apples, peeled and grated
- 125 ml rum
- 500 g dried fruit, can be mixed as desired
- 300 g nuts, whole
- 150 g sugar
- 2 tbsp cocoa powder (slightly heaped)
- 1 tbsp cinnamon
- 1 pinch of salt
- 1 tsp mace
- 1 tsp cardamom
- 1 tsp allspice, ground
- 1 tsp clove(s), ground
- 1 kg flour
- 1 ½ packets of baking powder
- 1 egg(s), beaten
- 50 g almonds, sliced
Instructions
Working time approx. 30 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 30 minutes
Makes 2 loaves – keeps fresh for a long time when wrapped in aluminum foil
Chop dried fruit (such as prunes, figs, dates, apricots, raisins) with a knife, then mix with all the other ingredients, except the flour and baking powder. Let it rest for at least 8 hours. Then add the flour mixed with the baking powder, knead on a floured surface, and form into two long loaves or one long loaf and one round loaf (the dough will be a bit sticky, but the loaves are still easy to shape – flour your hands a little if necessary). Place on a baking sheet lined with baking paper, brush with the beaten egg, sprinkle with sliced almonds, and bake in a preheated oven on the middle rack at 180°C (top and bottom heat) or 160°C (fan oven) for 90 minutes. Tastes delicious with butter and/or honey and makes a great addition to any Advent breakfast!
