Ingredients for 1 servings:

  • 600 g banana(s), weighed without peel
  • 150 ml buttermilk
  • 100 g honey
  • 300 g wheat flour (wholemeal)
  • 50 g flaxseed
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon powder

Working time approx. 10 minutes; Total time approx. 10 minutes

Ultra healthy, extremely simple and incredibly delicious sweet bread or cake, for 15 slices

Blend the bananas, buttermilk, and honey with a hand blender until smooth. Add the remaining ingredients and quickly knead with a hand mixer. Pour into a king cake pan lined with baking paper and bake for 70 minutes at 185°C. After that, the bread will no longer be sticky. It’s easy to slice like bread and tastes like a moist, fresh chocolate cake. It tastes great as a sweet breakfast, with coffee, and is also great as a snack. For me, it’s simply perfect between university and training. I recommend it to anyone who has too many bananas, who simply likes sweet things, loves chocolate cake, likes to eat very healthily, and for athletes as a great training meal. Tip: The amount of flaxseed can be increased as desired; you won’t notice it at all in the final product, and you’ll still get a good amount of fiber and fat-soluble vitamins that you wouldn’t be able to absorb in the otherwise fat-free cake.
