Ingredients for 2 servings:
- 4 tortilla(s), soft, medium size, 40 g each
- 130 g turkey breast fillet(s), cut into thin strips
- 2 tbsp rapeseed oil
- 2 tsp Mexican spice mix
- 170 g chickpeas, drained from can
- 75 g mountain cheese, grated
- 75 g Chinese cabbage, cut into strips
- 8 tsp salsa medium (tomato sauce with chili)
- Sour cream, optional
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes
with chickpeas, Chinese cabbage and turkey fillet
Mix the spice mix with the oil in a deep dish and marinate the fillet strips while preparing the remaining ingredients. Fry the marinated fillet strips in a hot pan, add the chickpeas, and heat through. Heat the tortillas according to the package instructions, then immediately top with the Chinese cabbage, meat and chickpea mixture, salsa, and cheese. Fold the lids shut and serve immediately, perhaps with a dollop of sour cream.
