Ingredients for 4 servings:
- 50 g cheese (Grana Padano), more if needed
- 1 jar tomato(s), dried, pickled in oil
- ½ bunch basil
- ½ handful of almond sticks
- 1 clove(s) garlic
- Olive oil, mild
- salt and pepper
- Vinegar or citric acid

inexpensive and quick to prepare red pesto (basic recipe)
Remove the tomatoes from the jar and chop them slightly, then puree them in a tall bowl with the oil from the jar, the basil, and the garlic. Now add the grated or finely chopped Grana Padano and the almond slivers and puree again. At this point, you can decide what consistency you want the pesto to have. If you want it to be more liquid, so it can be eaten with pasta, add a little more of the mild olive oil. Or if you want it to be even thicker, add a little more of the cheese. Finally, season everything with salt (usually not necessary, as the other ingredients provide enough salt), pepper, and a dash of vinegar or a few drops of fresh lemon juice. All of the ingredients are usually available at any discount store, and it’s very quick to prepare and can be varied wonderfully.
