Ingredients for 5 servings:

  • 400 g blackberries (frozen)
  • 1 tbsp maple syrup
  • 1 packet of vanilla sugar
  • 1 tsp powdered sugar
  • some tonka bean(s), grated
  • 1 tsp lemon juice

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Place the blackberries in a pot and let them stand for a few hours to thaw. This will allow them to release some of their juice. Then turn on the stove and let the blackberries simmer gently for a short time. Then pass them through a food mill. You can also press them through a sieve, but this is more laborious. I use 230 g. Then pour the passed mixture into a small pot, heat it, and simmer until the consistency is right. Season to taste with maple syrup, vanilla sugar, powdered sugar, tonka bean, and lemon juice. Let cool. You can also flavor it with a little alcohol, such as raspberry brandy. Divide the blackberry mixture among plates and arrange the actual dessert, such as mousse dumplings, on top. If desired, decorate with skewers.
