Prickly pear jam with limoncello

Ingredients for 1 servings:

  • 1 kg prickly pear(s)
  • 500 g gelling sugar 2:1
  • 1 lemon(s)
  • 75 ml Limoncello

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Carefully peel and finely dice the prickly pears. Add the gelling sugar, the juice of one lemon, and the limoncello and mix everything together. Let it steep for 15 minutes. Pour everything into a saucepan and simmer gently for about 5 minutes. Since I don’t like the seeds in the jam, I put everything through a food processor. Bring the juice back to a boil and pour a small sample onto a plate to check if the jam is thick enough. Transfer everything to twist-off jars. Turn the jars upside down for about 5 minutes to ensure they’re properly sealed, then turn them over.
