Elderflower honey

Ingredients for 1 servings:

  • 500 g honey
  • 2 tbsp lemon juice
  • 5 elderflower heads

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 14 minutes

Do not wash the fully bloomed elderflowers. Pluck the blossoms from the stems. It’s quicker to do this with scissors. Take 150g of honey from the jar and pour it into a saucepan. Mix with the lemon juice and elderflowers, and boil for about 4 minutes. Let it cool slightly and, while still liquid, stir it into the remaining honey in the jar. Let it steep for a few days before eating. The blossoms will rise to the top. Therefore, always stir the honey in the jar thoroughly before eating.
