Vegan pizza waffles

Ingredients for 1 servings:

  • 95 g wholemeal spelt flour
  • 95 g spelt flour type 630
  • 7 g baking powder
  • 20 g tomato paste
  • ½ small onion(s)
  • ½ bell pepper(s), red
  • ½ small zucchini
  • 3 slice(s) cheese – substitute, e.g. Wilmersburger slices, herbs
  • 1 tsp salt
  • 1 ½ tsp paprika powder
  • 1 ½ tsp oregano
  • 1 ½ tsp basil
  • 1 ½ tsp thyme
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 150 ml mineral water
  • e.g. olive oil for the waffle iron

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Makes about 5 – 6 waffles with peppers, zucchini and vegan cheese

Wash the peppers and zucchini. Deseed the peppers and cut into small cubes. Grate the zucchini. Dice the onion and vegan cheese. Combine both flours with the baking powder and spices in a bowl. Then add the vegetables and tomato paste. Stir in the mineral water until a smooth, thick batter forms. Use more or less mineral water if necessary. Heat the waffle iron, grease it, and pour about 1.5 tablespoons of batter into the center of the waffle iron. Bake the pizza waffles until crispy. This recipe yields approximately 5-6 waffles.
