Ingredients for 4 servings:
- 1 onion(s), red
- 4 carrots
- 1 stalk(s) leek
- 50 g vegetables
- 6 crepes
- 100 g crème fraîche
- 50 g cheese, grated
- lemon juice
- Salt
- Pepper, white
- 1 pinch of nutmeg
Instructions

Use of leftovers, good as a side dish to fish
Peel and chop the onion, carrots, leek, and other vegetables (if desired, e.g. green beans or broccoli). Fry the onion in a pan with a little oil. Then add the remaining vegetables, fry and sauté until soft, stir in about 70g of crème fraîche, and season with lemon juice, salt, white pepper, nutmeg, and grated cheese. If you like the taste of peanut butter, you can spice up the mixture with a tablespoon of peanut butter. Cover the bottom of a tart dish with the vegetable mixture and place a crèpe on top. Alternate layers of vegetable mixture and crèpes. Mix the remaining crème fraîche with a little cheese and spread on the final crèpe. Bake for 10-15 minutes at 180°C. Ideal as a side dish for fish. Serves 4 as a side dish, or 2 as a main course.
