Chicory wrapped in ham

Ingredients for 4 servings:

  • 4 large chicory
  • 50 g butter
  • 1 tbsp oil, e.g. sunflower oil
  • 4 slice(s) ham, cooked
  • 150 g crème fraîche
  • 150 g yogurt (3.5% fat)
  • 200 g processed cheese
  • Salt
  • Pepper, freshly ground
  • 50 g cheese (Gouda), grated

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Preheat the oven to approximately 180°C (top/bottom heat), 160°C (fan oven), and gas mark 2-3. Remove the wilted outer leaves from the chicory, halve the chicory lengthwise, wash, drain, and cut out the bitter stalks in a wedge shape, keeping the leaves as close together as possible. Heat the butter and oil in a pan. Sauté the chicory halves, cut-side down, over low heat for about 10 minutes. Halve the ham slices, place one slice around each chicory half, and place in a shallow baking dish. Heat the crème fraîche and yogurt in the pan. Bring the sauce to a boil and stir in the cream cheese to dissolve. Season the sauce with salt and pepper and pour over the chicory halves. Sprinkle with the grated cheese. Place the dish uncovered on a wire rack in the oven for about 20 minutes. Tip: Serve with small potatoes or rice as a side dish.
