Ingredients for 1 servings:

  • 60 g almonds
  • 60 g hazelnuts
  • 60 g cashew nuts
  • 85 g bread(s) (whole grain sunflower)
  • 115 g cheese (Gouda) or Emmental, grated
  • 1 m.-sized egg(s)
  • 5 tbsp dry sherry
  • 1 small onion(s), chopped
  • 1 small chili pepper(s), pitted, chopped
  • 1 bell pepper(s), red, finely diced
  • 1 tsp salt
  • 1 tsp black pepper
  • marjoram
  • lovage

Instructions

Crumble the bread with a food processor and mix with the cheese in a bowl. Grind the nuts with a food processor. In a second bowl, whisk the egg and mix with the sherry, onion, chili, and paprika. Add the nuts and mix well, seasoning with salt, pepper, marjoram, and lovage. Add the bread and cheese mixture. If the mixture is too dry, add a little more sherry or milk. Form the mixture into balls about 2.5 cm in size, place them on a baking sheet lined with baking paper, and bake in a preheated oven at 180°C for about 20-25 minutes until golden brown. The finished balls can be stored in the refrigerator. Place them on the grill briefly before eating or eat them cold.
