Ingredients for 3 servings:
- 2 tbsp olive oil
- 4 garlic cloves, squeezed
- 1 onion(s), chopped
- e.g. chopped ginger
- 2 tbsp flour
- 1,200 ml chicken broth
- 400 g carrot(s), peeled and sliced
- 1 tsp curry powder
- 1 tsp cumin
- 1 handful of dates, dried, chopped
- 1 tbsp lemon juice
- pepper
- e.g. yogurt
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes
Briefly sauté the garlic, onion, and ginger in olive oil, stir in the flour, and deglaze with the chicken stock. Add the carrots, curry powder, cumin, dates, and lemon juice. Cook for 10 minutes, then puree with a hand blender. Simmer a little longer. Season with pepper. Serve with a dollop of yogurt.
