Juicy apple fritters

Ingredients for 1 servings:

  • 80 g butter, soft
  • 150 g sugar
  • 4 eggs
  • 500 g quark (low-fat quark)
  • ¼ tsp salt
  • 500 g flour
  • 1 packet of yeast (dry yeast)
  • 2 apples, sour
  • 1 lemon(s), unsprayed, grated peel and juice
  • Fat for frying
  • n. B. Sugar for rolling

Cream butter, sugar, and eggs in a bowl until fluffy. Stir in salt, lemon juice, and lemon zest. Mix and sift flour and yeast. Add flour mixture and quark. Knead everything into a smooth dough, cover, and let rise in a warm place for about 30 minutes. In the meantime, peel and quarter the apples and cut out the cores. Cut the apple quarters into small cubes and knead into the yeast dough. Let rise for another 15 minutes. Then, using two moistened tablespoons, scoop out small dumplings and fry in the deep fryer until golden brown on all sides. Drain the doughnuts on kitchen paper and roll them in sugar while still hot.
