Red wine – strawberry jam

Ingredients for 1 servings:

  • 500 g strawberries (frozen)
  • 300 g red wine, dry
  • 400 g gelling sugar, 2:1
  • ½ tsp ascorbic acid (pure vitamin C powder)

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Pour the red wine over the strawberries and let it steep for about 2-3 hours. Add the gelling sugar and ascorbic acid and pass the fruit through a sieve – but not too finely. Heat gently while stirring, then simmer for another minute after it starts to boil. If necessary, test for setting. Then skim off the foam and fill the hot jam to the brim in prepared jars. Seal immediately and turn upside down for a few minutes. It tastes simply delicious and isn’t too sweet.
