Ingredients for 1 servings:

  • 1.2 kg currants, red
  • 4 large nectarines
  • 1 bottle of sparkling wine (diabetic sparkling wine)
  • 1 tsp flavoring (vanilla)
  • 500 g gelling sugar (diet – gelling – fructose / 3:1 / egNordzucker Sweet Family)
  • 250 ml water if needed

Wash, deseed, and juice the currants (e.g., using a Mr. Magic juicer or a standard steam juicer). If you don’t have any of these tools, you can also briefly boil the currants with 250 ml of water. Let cool slightly. Drain the resulting juice and set aside. Press the berries through a linen cloth. If you don’t want to do the work, you can also use ready-made currant juice (e.g., from Natreen), which will shorten the specified preparation time. Yields approximately 600 ml of juice. Wash, stone, and dice 4 large nectarines. Add to the currant juice. Add a teaspoon of vanilla extract and fill the mixture to 1.2 liters with diabetic sparkling wine. Add 500 g of diet gelling sugar. Stir well and bring to a boil. Boil briskly for about 4 minutes, stirring constantly. Then pour the mixture into prepared jars while still hot and seal them immediately. Store in a cool, dark place until ready to serve. Makes approximately 7 0.25-liter jars.
