Yeast dough pastry, fried in clarified butter
Make a yeast dough from the listed ingredients and let it rise for about 1 hour until it has doubled in size. Use 2 bowls for this, as otherwise the dough will overflow. Heat the clarified butter in a large saucepan. Do the wooden spoon test. If you hold a wooden spoon in the fat, bubbles should form on the handle of the spoon, then the fat is hot enough. Now use a tablespoon to scoop out small amounts of dough and drop them into the hot fat. This will create fun shapes. Turn the fire sparrows over in the fat. When they are a nice golden brown on both sides, place them on a kitchen towel so the fat can drain off. Toss them in a bowl of sugar while they are still warm. These cookies are always a success. Children love them, but adults enjoy them too. They can be frozen with the sugar on the same day, then thaw in the microwave and enjoy. That way you always have something at home for surprise guests.
