Beetroot and goat cheese sandwich

Ingredients for 1 servings:

  • 2 bagels
  • 4 slices of goat’s cheese
  • 1 large beetroot
  • 1 tsp olive oil
  • salt and pepper
  • 6 slices of cucumber
  • 1 handful of arugula
  • 1 chili pepper(s), optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Preheat the oven to 180°C (fan/convection oven). Cut the bagels open. Spread two slices of goat’s cheese on each half of the bagel. Cut the beetroot into 6 slices and place 3 slices on each bagel with goat cheese. Brush ½ teaspoon of olive oil on each beetroot and season with salt and pepper. Now bake the topped and untopped bagel halves for about 5 minutes until crispy, then remove from the oven. Cut 6 slices of cucumber and place them on the beetroot. Top with the arugula and, if desired, add a few chili rings. Have fun making this! Naturally Delicious
