Roros scampi skewers – fried in garlic olive oil

Ingredients for 2 servings:

  • 400 g scampi, fresh or frozen
  • 4 large garlic cloves
  • 1 cup olive oil, maybe more
  • some salt
  • 1 lemon(s), the juice
  • 1 lemon(s), for decoration

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Thaw frozen shrimp. Thread fresh shrimp tightly onto wooden skewers. Preheat plates! Thinly slice 1 lemon (for garnish). Squeeze the juice of the other lemon. Finely chop the garlic. Heat plenty of olive oil in a pan over medium heat, add the garlic, and sauté slightly. Place the shrimp skewers in the pan and fry for about 2-3 minutes on each side (cooking time depends on the size of the shrimp—increase cooking time accordingly for larger shrimp). Season the skewers with salt and drizzle with a little lemon juice. Arrange the skewers on preheated plates along with the lemon slices. Serve with: baguette (= ideal for dipping with the delicious garlic oil).
