Ingredients for 4 servings:

  • 12 slices of Ciabatta
  • 2 tbsp olive oil
  • 175 g mountain cheese (e.g. South Tyrolean Sennerkäse)
  • 30 g butter
  • 12 quail eggs
  • 6 slices of Parma ham
  • 1 handful of basil or lemon balm leaves
  • Sea salt
  • Black pepper, coarsely ground

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

for 4 servings

Preheat the oven to 200°C. Brush the bread slices with olive oil. Grate the mountain cheese and spread it on the bread slices. Place the bread on the oven rack. Place the rack on the middle shelf of the oven and place a baking tray underneath. Bake the ciabatta slices at 200°C for 7-8 minutes until golden brown. Meanwhile, melt the butter in a pan over low heat and remove from the heat. Carefully crack the quail eggs and drop them into the pan. Return the pan to the heat and fry the eggs over medium heat. Halve the ham slices crosswise. Remove the bread from the oven. Top each with 1/2 slice of ham and 1 quail egg. Sprinkle with coarse pepper, sea salt, and herb leaves and serve.
