Spelt carrot bread

Ingredients for 1 servings:

  • 300 g wheat flour
  • 250 g wholemeal spelt flour
  • 1 packet of dry yeast
  • 300 ml water, lukewarm
  • 2 tsp salt
  • 2 tsp sugar
  • 1 tbsp vinegar
  • 1 tbsp olive oil
  • 2 carrots, grated
  • 2 tsp chia seeds
  • 2 tsp poppy seeds
  • 2 tsp sesame seeds

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 15 minutes

Place all ingredients in the bowl of a food processor and mix well. Once the dough no longer sticks to the edges, cover and let rise for 40 minutes. After the proving time, knead the dough and shape it into a loaf of bread. Place the shaped loaf of bread on a baking tray lined with baking paper and score several times. Cover with a clean tea towel and let rise for 45 minutes. After the proving time, set the oven to 200°C (top/bottom heat) and place the baking tray with the loaf in the still-cold oven. If you like, you can also place an ovenproof bowl of water on the bottom of the oven. Bake for approx. 40 minutes and then let cool on a rack.
