Baked cauliflower with cheese sauce

Ingredients for 3 servings:

  • 1 m.-large cauliflower
  • salt water
  • 200 g cooked ham, sliced
  • 100 g Parmesan or other hard cheese, grated
  • Butter for the mold
  • 200 g crème fraîche
  • ¼ liter of milk
  • 1 tbsp breadcrumbs

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Bring a large pot of water to a boil. Trim and wash the cauliflower, divide it into florets, and dice the stalks. Salt the water, add the cauliflower florets and diced stalks, and bring to a boil. Then reduce the heat to medium. The water should still be boiling. Cook the cauliflower for about 7 minutes, but not too soft, as it will continue to cook in the oven. Trim the fat from the ham and dice it. Grate the cheese. Drain the cooked cauliflower in a sieve. Preheat the oven to 220°C (top/bottom heat, gas mark 4-5). Grease a baking dish thickly with butter. Alternate the cauliflower and diced ham. Mix the crème fraîche, milk, and grated cheese in a bowl and pour evenly over the cauliflower. Sprinkle with breadcrumbs. Place the cauliflower on the middle rack of the oven and bake for 20 minutes, until golden brown. Jacket potatoes go well with this.
