A dessert with carrots

Ingredients for 8 servings:

  • ½ kg carrot(s)
  • 100 g sugar
  • 5 tbsp, leveled water
  • 1 ½ tbsp, leveled cornstarch
  • 10 tbsp, leveled water
  • 150 ml whipped cream
  • 100 g walnuts or hazelnuts

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Peel and finely grate the carrots. Place them in a saucepan and heat until they release some juice. Cover and simmer briefly, then add the sugar and 5 tablespoons of water and continue cooking until the carrots are soft. Mix the cornstarch with 10 tablespoons of water, add this to the carrots, and simmer for another 5 minutes while stirring. Remove the pan from the heat and let the carrots cool to lukewarm. Cover a plate (approx. 20 x 30 cm) with foil, place the carrots on the foil and smooth them down, then let them cool completely. Spread a thin layer of whipped cream on top and sprinkle with walnuts. Use the foil to tightly roll up the carrots. If desired, you can also sprinkle the roll with nuts.
