Sweet pumpkin

Ingredients for 4 servings:

  • 400 g pumpkin flesh
  • 1 lemon(s), untreated
  • 2 stalk(s) cinnamon
  • 80 g sugar
  • 60 g raisins
  • 50 g walnuts
  • 400 ml water
  • 150 g sour cream
  • 150 g yogurt

Working time approx. 40 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Thinly slice the pumpkin (I always use Hokkaido). Grate the lemon zest and squeeze the juice. Combine the water, lemon zest and juice, cinnamon, raisins, walnuts, and 60g of sugar and bring to a boil. Then add the pumpkin and simmer gently for about 10 minutes. For the yogurt sauce, combine the sour cream and yogurt and sweeten with the remaining 20g of sugar (adding a dash of lemon juice is fine, if you like). Serve separately with the pumpkin. This dessert tastes just as good warm as it does cold.
