Ingredients for 4 servings:

  • ½ cup olive oil
  • ½ cup lemon juice, fresh
  • Salt, preferably coarse-grained
  • pepper
  • 1 head of lettuce
  • 1 bunch watercress
  • 2 large tomatoes, thinly sliced
  • 2 large onions, red, thinly sliced ​​and cut into rings
  • 16 olives, as desired

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk or fork together olive oil and lemon juice until well blended. Season with plenty of salt and a pinch of pepper. Gently toss the lettuce and watercress in the sauce. Arrange on plates. Arrange the tomato slices slightly overlapping on top and scatter the onion rings (and olives, if using) over the tomatoes. Serve immediately.
