Spread the love

Ingredients for 2 servings:

  • 250 g mushrooms (e.g. king oyster mushrooms, chanterelles, oyster mushrooms)
  • 1 tbsp butter
  • 2 eggs, very fresh
  • ½ bunch chives
  • pepper, black
  • Vinegar
  • Salt (Fleur de Sel)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Bring salted water to a boil, add a splash of vinegar. Crack the eggs into cups and slowly drop them in. Reduce heat to low and poach for 4 minutes, then remove. The eggs can be kept warm in warm water. Heat butter in a pan and slowly fry the mushrooms over medium heat. Finally, season with salt and pepper. Place one egg on each plate and arrange the mushrooms on top. Garnish with plenty of chives. The whole thing tastes just as good with a perfectly cooked fried egg.
