Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 1 apple, sour
  • 1 onion(s), red
  • 2 tsp salt
  • 2 tbsp sugar
  • 3 tbsp sour cream
  • salt and pepper
  • dill
  • possibly raisins
  • possibly herbs

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Zucchini with a twist…

Wash the zucchini and apple (peel if necessary), core them, and dice them. Finely dice the onion, mix everything in a bowl with the salt and sugar, and refrigerate for at least two hours. After the waiting time, drain off about two-thirds of the liquid, add the sour cream and dill, and mix well. Season with salt and pepper. The remaining liquid will cause it to foam slightly when stirred; that’s okay. Perfect for grilling or with vegetable rösti! As a possible variation, you could add raisins or experiment with other herbs (e.g., tarragon). If you coarsely grate the zucchini and apple instead of dicing them, the result can also be enjoyed as a spread on bread; in this case, the sour cream can easily be replaced with cream cheese.
