Ingredients for 4 servings:

  • 1 kg pumpkin(s)
  • 2 tomatoes
  • 1 onion(s)
  • Parsley
  • salt and pepper
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pumpkin with tomatoes

Peel the pumpkin, remove the seeds and soft flesh, and cut the firm flesh into small pieces. Sauté the chopped onion in olive oil. Simmer the peeled and seeded tomatoes for 5 minutes. Season with salt and pepper and sprinkle with chopped parsley. Serve with cooked meat or as a standalone dish, topped with slices of sausage.
