Ingredients for 3 servings:

  • 500 g chicken breast
  • 1 ½ liters vegetable broth
  • 4 large onions, chopped
  • 2 chili peppers, fresh
  • 1 tube(s) Tomato paste
  • 1 jar creamy peanut butter
  • 1 clove(s) garlic
  • Salt
  • Paprika powder, sweet

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Chicken breast with peanut butter, chili, and tomato sauce

Cook the chicken in the vegetable broth with the onions, garlic, and chilies for about 30 minutes with the lid closed. Then, using two forks, finely shred the meat along the grain and return it to the pot. Add the peanut butter and the can of tomato paste and simmer for 20 minutes over medium heat with the lid open. Stir well every now and then, or it will stick quickly. Season to taste with salt and paprika. Serve with rice (I like basmati rice).
