Ingredients for 1 servings:

  • 3 cloves garlic
  • 1 egg yolk
  • 250 ml oil, neutral (e.g. sunflower oil)
  • 1 tsp lemon juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the room-temperature egg yolk in a bowl. Peel the garlic and grind it into a paste in a mortar and pestle. Add salt a little at a time to thicken the paste. Then, in a bowl, combine the egg yolk with the lemon juice and a squeeze of lemon juice. Slowly add the oil, first drop by drop, then in a thin stream, whisking vigorously the whole time. Be careful, though: if you add the oil too quickly, the mixture will curdle, meaning the whisking process will take time! Finally, taste and season with salt and pepper if necessary.
