Ingredients for 4 servings:

  • 1 slice(s) of toast
  • 10 cl milk
  • 8 cloves garlic
  • 1 egg(s), including the yolk
  • ½ liter of oil (olive oil)
  • ½ lemon(s), the juice
  • 1 pinch(s) of sugar
  • Salt
  • Pepper, freshly ground

Garlic mayonnaise special

Cut the crust off the toast and soak the bread in the milk, then squeeze it well and place it in a bowl. Press in the garlic cloves, then mix with the egg yolk until smooth. Now add a thin stream of olive oil, whisking vigorously with a whisk until a mayonnaise-like paste forms. Finally, season generously with lemon juice, sugar, salt, and plenty of pepper. Paired with crusty bread and a glass of wine, this aioli makes the basis for a convivial snack and shortens the wait for hungry guests before the actual meal arrives.
