Ingredients for 2 servings:

  • 600 g floury potatoes
  • 3 tbsp Ajvar, spiciness of your choice
  • 100 g crème fraîche, legeré
  • 1 tbsp parsley, chopped
  • Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

A creamy companion with a spicy kick

Peel and dice the potatoes. Cook in salted water for about 15 to 20 minutes. The exact cooking time depends on the size of the cubes. Drain some of the cooking water and mash the potatoes with a masher. Stir in the ajvar, crème fraîche, and parsley. Season with salt if desired. The ajvar mashed potatoes are delicious as a side dish to roasted meat, but also on their own.
