Ingredients for 6 servings:

  • 1 ½ kg minced meat
  • ½ chicken
  • 250 g soup meat
  • 3 eggs
  • 2 slices of toast
  • 1 tbsp mustard, medium hot
  • 1 tbsp crème fraîche
  • 1 bunch parsley, finely chopped
  • salt and pepper
  • Broth from this recipe
  • Nutmeg, freshly grated

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

This method of preparation is so unusual in Germany that there is no name for it

Make a broth from the 1/2 chicken, the broth meat, and any ingredients you like. Let the meat cool. Cut only the lean portions of the chicken and broth meat and the slices of toast into small cubes, then mix well with all the ingredients. Form an oval shape and place it on a cloth. Carefully wrap the ground meat in the cloth and tie it tightly with string. Bring the broth back to a boil and add the wrapped meatloaf. Simmer over very low heat for about 40 minutes. Turn off the heat and let the package stand for another 20 minutes. Slice the meat and serve immediately with your desired sauce. A green sauce or a hearty onion gravy with fried potatoes would go well with this.
