Alberto's minced meat rolls with lukewarm cauliflower and broccoli salad

Ingredients for 6 servings:

  • 5 sausages, coarse, only the meat
  • 2 slices of toast
  • ½ bunch parsley
  • 1 clove(s) garlic, finely chopped
  • 1 tsp, leveled mustard, medium hot
  • 1 tbsp mayonnaise
  • 1 egg(s)
  • some nutmeg, freshly grated
  • 1 cauliflower, cut into small florets
  • 1 broccoli, cut into small florets
  • 1 bell pepper(s), peeled, diced
  • 3 beef tomatoes, skin removed, diced
  • 2 spring onions, cut into fine rings
  • 1 vegetable onion(s), very finely chopped
  • e.g. salt and pepper
  • e.g. olive oil
  • n. B. Balsamic vinegar, bianco

Instructions

Working time approx. 1 hour 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 40 minutes

Cook the cauliflower in boiling water for 2 minutes. Add the broccoli and cook for 3-4 minutes. It’s important that the vegetables remain firm to the bite. Drain and place in a large bowl. Mix in the bell pepper, tomatoes, spring onions, and sweet onion. Add olive oil and balsamic vinegar to taste and season with salt and pepper. Keep warm in the oven at 50°C. Thoroughly mix the first 8 ingredients together. Cut off a corner of a freezer bag, fill the bag with the prepared sausage meat, and form rolls. Fry these rolls in a little fat until crispy on all sides. They will stay crispy on the outside and soft on the inside. Serve everything lukewarm. It’s ideal as a snack or as a mid-morning meal.
