Ingredients
 

Abondigas:

  • 1 Pc. Finely diced onion
  • 2 Pc. Garlic cloves
  • 1 Pc. Red chilli
  • 3 tbsp Olive oil
  • 100 g Finely chopped dates
  • 1 Pc. Egg
  • Chopping mix
  • 1 tbsp Mustard medium hot
  • 1 Pc. Zest of lime
  • 3 tbsp Garam Masala
  • Salt

Sauce for albondigas:

  • 1 Pc. Finely chopped onion
  • 1 Pc. Garlic clove chopped
  • 1 tbsp Olive oil
  • 1 Pc. Finely diced paprika
  • 2 Pc. Red chilli
  • 1 Can Pizza tomatoes canned
  • 2 tbsp Tomato paste
  • 300 ml Vegetable broth
  • Salt
  • Sherry

Tumbet:

  • 1 Pc. Red pepper
  • 1 Pc. Yellow pepper
  • 1 Pc. Green paprika
  • 4 Pc. Potatoes
  • 1 Pc. Zucchini
  • 1 Pc. Onion white
  • 2 Pc. Garlic cloves
  • Olive oil
  • Sugar
  • Oregano
  • Salt
  • Pepper
  • 1 Can Chopped tomatoes

Bacon-wrapped dates:

  • Dates
  • Smoked bacon

Prawns in garlic stock:

  • Shrimp
  • Garlic
  • Olive oil
  • Chili

Instructions
 

Albondigas:

  • Fry the onions in olive oil, then add the garlic and chilli and leave to cool. Then mix the mince, dates, egg, mustard, lime zest and garam masala and add to the cooled mass.
  • Now form small balls out of the dough and place on a baking sheet lined with baking paper. Then fry at 200 ° C top and bottom heat for 13 minutes.

Sauce for albondigas:

  • Sauté the onions in olive oil, then add the garlic, paprika, pizza tomatoes, tomato paste and chilli. Now salt the sauce and deglaze with the broth. Then it is pureed and can be refined with sherry.

Tumbet:

  • Slice the potatoes and zucchini, cut the peppers lengthways, fry in olive oil and season with salt.
  • For the tomato sauce, first heat a tablespoon of olive oil and then sear the garlic with the onions in it. After these have been steamed briefly, the tomato cubes can be added and seasoned with sugar, salt, oregano and pepper.
  • To serve, the turrets are layered in a serving ring in the following order: potatoes, tomato sauce, paprika, tomato sauce, zucchini, tomato sauce, paprika, tomato sauce. The tower can be garnished with a basil leaf.

Bacon-wrapped dates:

  • Wrap the dates with a slice of bacon each and grill in the oven for about 10 minutes until the bacon turns brown and crispy.

Prawns in garlic stock:

  • Remove the skin and intestines from the shrimp and pour plenty of olive oil into a mold. Add the garlic slices according to the desired intensity and a little chili, depending on the degree of spiciness.
  • Place the mold in the cold oven and heat it at 200 ° C top and bottom heat until the oil starts to simmer and the garlic turns golden yellow.
