Ingredients for 8 servings:
- 300 g wholemeal spelled flour, organic
- 200 g butter, organic, cold
- 100 g cane sugar, organic
- 3 egg yolks
- 1 pinch of salt
- 1 packet of vanilla sugar
- 10 ml rum (Havana Club), white
- 50 g almond flakes
- 10 ml milk
- 3 tbsp jam (apricot jam)
- 5 ml rum (Havana Club), white
- 2 tbsp jam (plum jam)
Instructions
Working time approx. 1 hour; Rest time approx. 2 hours; Cooking/baking time approx. 12 minutes; Total time approx. 3 hours 12 minutes
Christmas cookies
In a food processor, mix the cold butter with a pinch of salt, the sugar, and 2 egg yolks. Then swap the whisk for a dough hook. Add the remaining dough ingredients and knead until smooth. Chill the dough in the refrigerator for at least 2 hours, or overnight if possible. On a floured surface, cut out round cookies. Cut a hole in the center of half of the cookies. Mix 1 egg yolk with about 5 ml of milk in a bowl and brush the circles with it. Sprinkle the flaked almonds on top. Bake at 170 degrees Celsius (top/bottom heat) for about 12 minutes. Mix the jams well with the rum. After baking, spoon about 1 teaspoon of the jam mixture onto each round cookie and place the circles with the flaked almonds on top.
