Ingredients for 2 servings:

  • 250 g mixed leaf salad
  • 50 g Parmesan, coarsely sliced ​​or crumbled
  • 2 tangerines
  • 1 pomegranate
  • 2 kiwis
  • 2 tbsp honey
  • 8 tbsp olive oil
  • 4 tbsp balsamic vinegar
  • salt and pepper
  • possibly hazelnuts

Salad with mandarins, kiwi and pomegranate

Wash the lettuce and tear into bite-sized pieces. Peel and separate the mandarins, then cut each piece in half again (it tastes even better if you fillet the mandarins). Cut open the pomegranate and remove the seeds. Peel the kiwis and dice them. Mix the fruit and salad together in a bowl. Mix together the balsamic vinegar and honey, then gradually whisk in the oil. Season with salt and pepper. Serve sprinkled with Parmesan cheese and hazelnuts, if desired. A fruity salad for the winter.
