Ingredients for 4 servings:

  • 400 g beans (bush beans, bobby beans in winter)
  • 100 g sheep’s cheese
  • 50 g ham (Serrano)
  • Parmesan, coarsely sliced
  • pine nuts
  • Raisins
  • 2 tbsp honey
  • 1 tbsp mustard
  • 50 ml balsamic vinegar
  • 200 ml olive oil

Cook the beans in salted water until al dente (alternatively: steam them), drain, and then let cool. In the meantime, prepare the marinade by thoroughly blending the honey, mustard, balsamic vinegar, and olive oil, and seasoning with salt and pepper. Cut the feta cheese and Serrano ham into small pieces and mix them with the beans. Add pine nuts and raisins, if desired. Toss everything with the marinade. Serve on a large or several small plates, garnished with Parmesan shavings.
