All American Chocolate and Peanut Butter Cheesecake

Ingredients for 1 servings:

  • 250 g biscuit(s), chocolate biscuits with nuts OR:
  • 150 g biscuit(s) (chocolate biscuits) AND:
  • 100 g nuts, ground
  • 75 g butter, liquid
  • 500 g cream cheese
  • 150 g sugar
  • 150 g peanut butter
  • 2 eggs
  • 125 g dark chocolate (e.g. 60%)
  • 1 tbsp butter, softened
  • 100 g chopped peanuts, alternatively hazelnuts

Working time approx. 30 minutes; Total time approx. 30 minutes

Peanut Butter Chocolate Cheesecake

Whisk the cream cheese with the sugar and peanut butter. Add the eggs one at a time, whisking constantly. Crumble the cookies very finely (best in a food processor or in a freezer bag) and mix with the melted butter. Pour the cookie mixture into a 26cm springform pan lined with baking paper or greased with baking paper, press firmly, and spread the cheese mixture evenly over it. Bake at 180°C for about 30 minutes, until the cheese mixture is firm. Melt the chocolate and butter over a pan of simmering water and spread evenly over the cooled cake. Sprinkle with nuts and store in a cool place until ready to serve.
