All-American Chocolate Cake
Preheat the oven to 160°C (bottom heat if possible, otherwise top/bottom heat). Grease two springform pans (22 cm) and dust with cocoa powder. In a large bowl, combine all the batter ingredients with a mixer at low speed, then mix at high speed for 2 minutes. Pour the batter equally into the two springform pans. Place the pans in the oven and bake the cakes for 25 minutes. Do the skewer test. Remove the pans from the oven and let the cakes cool in the pan for 10 minutes. Then remove from the pans and let them cool completely on a wire rack. When the cakes are almost completely cool, prepare the frosting. In a saucepan, bring the whipped cream and sugar to a boil over medium heat. Let it boil for 1 minute, then remove the pan from the heat. Add the other frosting ingredients to the whipped cream mixture and stir to melt the chocolate and butter. Pour the mixture into a large bowl and refrigerate for 25 minutes until chilled and slightly thickened. Remove the bowl from the refrigerator and beat the mixture with a mixer on high speed until semi-stiff. Cut the two cakes in half horizontally to create 4 layers. Place one layer on a cake plate and spread 1/4 of the frosting on it. Place the second layer on top and spread another 1/4 of the frosting on it. Place the third layer on top and also spread with frosting. Place the fourth layer on the cake. Spread the remaining frosting all over the cake, including the edges. Use a spoon to press decorations onto the surface of the cake into the frosting and sprinkle the edges with shaved chocolate. Refrigerate the cake until ready to serve.
