Ingredients for 1 servings:

  • 1 kg carrot(s)
  • 1 kg leeks
  • 1 kg celeriac with celery leaves
  • 1 large parsley root(s)
  • 3 bulb(s) of onion(s)
  • 1 bunch lovage

Instructions

A complete substitute for all ready-made products and jarred broths. Natural, healthy cooking, for self-catering. Very suitable for all dishes, especially braised dishes, fish, and quick sauces without stock. Clean, peel, and wash the carrots, leeks, celery, and onions. Roughly chop them in a food processor (with a blade), very thinly, which is very important. Spread them on baking sheets, let them dry for 1 hour at 100 degrees Celsius (212 degrees Fahrenheit), then add the washed herbs, including the celery leaves (leave them whole), and let them dry completely at 50 degrees Celsius (122 degrees Fahrenheit). Alternatively, you can use a dehydrator. Then finely grind the dried vegetables, including the herbs, in the food processor and fill them into jars. Add one or two teaspoons to braised dishes; it’s very tasty and makes a delicious sauce base. Also very suitable for quick sauces. Finally, no more ready-made broths.
