Ingredients for 1 servings:
- 500 g tomatoes
- 1 orange(s) (organic)
- 2 tbsp olive oil
- some salt and pepper, black from the mill, coarsely ground
- 1 tbsp sugar or powdered sugar
- 1 handful of thyme leaves
- ¼ liter olive oil
Instructions
Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes
Line a baking sheet with parchment paper, brush with oil, and sprinkle with salt and pepper. Slice the tomatoes and arrange them tightly on the sheet. Season with a little sugar, salt, and pepper. Peel the orange zest (or finely peel it and then cut it into thin strips) and place it on top of the tomatoes. Set the oven to approximately 70–80°C (160–170°F) and dry the tomatoes for approximately 1 hour. Then turn off the oven and leave the sheet in the oven overnight. Now you can place the tomatoes in small screw-top jars and fill them with olive oil just enough to cover them. They will keep in the refrigerator for a few months. Mixed with hot pasta and sprinkled with Parmesan cheese, they’re a summer treat even in winter!
